Wedding style korma

This was something I cooked up based on whatever was in the fridge/freezer, but turned out really good, so here it goes: 

In a bowl, take a handful of cashews and about 1/4 cup melon seeds (optional). Add water and cook in the microwave for about 2 minutes. Let cool a bit and make a fine paste. Thaw out the Paneer and dice it. Heat some oil, and saute 1 cube of thawed methi (the kind you get in the frozen section). Set it aside. I did some of the veggies later, but can also do it at this stage. Saute a handful of mushroom pieces and set aside. On really high heat, saute 1 thinly sliced carrot, and add 1/2 diced green bell pepper. Add a bit of salt, and set aside. Now, heat some more oil, add whole spices (cloves, cinnamon, mace, black pepper, green cardamom), and add 1 pack of curry mix (this is my own curry mix that I prepare* and freeze) - about 3/4 - 1 cup. Saute until it all thaws out. Add the cashew paste, and water and cook for a minute or so. Add salt to taste, sugar (just a few pinches), a bit of red chilli powder (for color mainly), some kasuri methi, and a pinch of garam masala and mix. Now add methi, paneer, a cup of green peas, 1/2 cup corn, the mushrooms, carrots and pepper. Adjust the consistency as needed with water and cook till it all comes together. Garnish with freshly chopped cilantro and serve with hot parathas or naan. 

*Prepared curry mix: This is a lifesaver in the kitchen. Heat oil, add cumin seeds, add ginger, garlic and green chilli paste, saute. Add finely chopped onion, and saute until the onion turns light brown. Add turmeric, red chilli powder, coriander powder, raw mango powder, and some garam masala. Saute for a few seconds. Add crushed tomatoes (can is ok), and saute until oil separates. Cool completely and freeze in ice trays, zip loc bags and plastic containers for different portion sizes.

Special Italian Dinner

For my dear husband's birthday. It was a nice candle light dinner, with pictures posted on WhatsApp :-) Got lots of requests for describing the food, so I figured it would be nice to break it down...and admit that it wasn't really as fancy as it seemed...and to make it easier for cousins back home to replicate some of the recipes The Menu: - Olive Ciabatta (bought from WholeFoods..any nice crusty bread is good) with herb oil (olive oil, salt, red pepper flakes, just a very small pinch of fresh herbs - oregano and rosemery) - Antipasto (it's basically small, tasty bites). At some nice grocery stores, they have a large selection of anti pasto to buy, so I just select mine from there and arrange it on a plate at home. Any small, cured or pickled foods are good. This time I used marinated artichoke hearts with roasted red peppers, garlic and tomatoes poached in olive oil, olives, and pickled sweet peppers stuffed with goat cheese.
